How'd I spend my last day of vacation?
Why, making applesauce of course!
3 1/2 pounds of rome beauty apples; peeled, cored, sliced
1/4 cup light brown sugar
1/2 cup Splenda
1/8 cup lemon juice
2 tsp cinnamon
1 1/2 cup water
Throw all ingredients in a big pot. Cover. Bring to a boil.
Reduce heat to low and cook for 40minutes.
Transfer to food processor and pulse until smooth.
Divided into 8 servings, approx 1/2 cup each, 2 points!
